- Heat cast iron tortilla skillet over medium heat. Melt a tablespoon of butter. Peel, remove tails, and cut up shrimp into bite sized pieces. Or buy shrimp with everything already removed.
- Chop up onion.
- Add shrimp and onion to a hot skillet. Cook 2-3 minutes and flip the shrimp. The shrimp should be pink. Cook on other side for same amount of time. Remove from skillet and set aside.
- Rinse skillet. Return to medium heat and melt another dab of butter. Cover one tortilla with as much bang bang sauce as you like. Add cheese. Add shrimp and onions. Add another tortilla to the top.
- Cook until it is golden brown. Flip and cook the other side. Make sure it is golden brown before flipping. Once both sides are golden brown remove. Cut with a pizza cutter and enjoy with salsa or sour cream for dipping.
