Ingredients
  

  • 2 low carb tortillas
  • Enough shrimp to cover 1 tortilla
  • As much shredded cheese as you want
  • As much Bang Bang sauce as you want
  • 2-3 tbsp butter
  • 1 Vidalia onion

Equipment

  • 1 skillet

Method
 

  1. Heat cast iron tortilla skillet over medium heat. Melt a tablespoon of butter. Peel, remove tails, and cut up shrimp into bite sized pieces. Or buy shrimp with everything already removed.
  2. Chop up onion.
  3. Add shrimp and onion to a hot skillet. Cook 2-3 minutes and flip the shrimp. The shrimp should be pink. Cook on other side for same amount of time. Remove from skillet and set aside.
  4. Rinse skillet. Return to medium heat and melt another dab of butter. Cover one tortilla with as much bang bang sauce as you like. Add cheese. Add shrimp and onions. Add another tortilla to the top.
  5. Cook until it is golden brown. Flip and cook the other side. Make sure it is golden brown before flipping. Once both sides are golden brown remove. Cut with a pizza cutter and enjoy with salsa or sour cream for dipping.

Ingredients
  

  • 1 box Annie's Mac & Cheese
  • 1 Egg beaten
  • 1/4 cup Heavy Whipping Cream
  • 1/2 cup Shredded cheddar cheese
  • 1 tbsp butter
  • 1/4 tsp Ground Mustard
  • 1/4 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 6 slices bacon thin

Method
 

  1. Preheat oven to 400 degrees.
  2. Melt butter in a skillet in the oven.
  3. Add macaroni shells to boiling water. Boil 5 minutes. Drain
  4. Cook bacon 3-4 minutes each side. It will not be done.
  5. Add macaroni shells to mixing bowl. Add in cheese packet that came in mac & cheese box. Mix well.
  6. Add egg, whipping cream, and cheese. Mix well.
  7. Add ground mustard, onion powder, and garlic powder. Mix well.
  8. Remove skillet from oven. Pour mac & cheese in skillet.
  9. Add bacon to the top. I weave mine like a lattice.
  10. Bake in the oven for 15 minutes. Remove and top with shredded cheddar cheese.
  11. Place back in oven and turn oven on broil. Broil until cheese is melted and bacon is browned around the edges. My oven took about 3 – 4 minutes.
  12. Remove and enjoy!

  • 1 tbsp coconut oil
  • 1 rotisserie chicken deboned
  • 1 tsp salt
  • 1 tsp cayenne pepper
  • 2 tsp Italian seasoning
  • 2 tsp ground cumin
  • 1 onion chopped
  • 1 lime juiced
  • 1 15 oz cream corn
  • 1 15 oz whole kernel corn
  • 1 15oz black beans
  • 3 15 oz cannellini beans
  • 2 10 oz diced tomatoes w/chilies Rotel
  • 2 cloved garlic minced
  • tortilla strips for topping

Method
 

  1. Heat coconut oil in large pot. I use a cast iron Dutch oven. Add in chopped onion. Cook until soft.
  2. Add in garlic. Stir for a minute. Add in salt, cumin, and Italian seasoning.
  3. With a food processor or blender, puree 2 cans of cannellini beans. Do not drain beans.
  4. Pour into pot with onion. Stir.
  5. Add in remaining can of cannellini beans, along with corn, black beans, and tomatoes. Do not drain any cans.
  6. Add cayenne pepper and chicken. Stir and bring to a simmer.
  7. Simmer for 30 minutes.
  8. Add the juice of 1 lime. Stir and serve.
  9. Top with tortilla strips. Enjoy!

This recipe was created for my Dad. He wanted a no sugar added Brunswick Stew. He also wanted it to be more like a soup than a stew. If you prefer it thicker add more meat, do not add the 1 cup of water, and add a cornstarch slurry to thicken it some.

Our journey begins with the basics – ground beef, onion soup mix, and a sprinkle of garlic powder for that extra punch. Method
 

  1. Preheat oven to 425 degrees
  2. In a 10 inch cast iron skillet brown ground beef. Drain grease.
  3. In a large measuring cup or bowl mix together 21 oz of water, garlic powder, and 2 packets onion soup mix. Pour into skillet.
  4. Rinse 2 cups of long grain rice. Do not use instant. Place in skillet.
  5. Mix together 1 jar of gravy with remainder water. Pour into skillet. Mix well.
  6. Place butter slices across top. Cover with foil. Bake in preheated oven for 30 minutes.
  7. After 30 minutes, open oven and remove foil from skillet. Bake an additional 20 – 30 minutes until water is absorbed and rice is done.
  8. Remove from oven, fluff rice to mix seasonings into all areas of rice. Serve and enjoy!

  • 2 tbsp butter
  • 1 bottle Italian dressing
  • 3 tbsp grated parmesan

Method
 

  1. In a skillet over medium heat, sear the chicken thighs in 1 tbsp of the olive oil. Cook about 3 minutes per side. Make sure the skillet it hot before adding chicken skin-side down. Season each side with 1/2 of the salt, pepper, and garlic powder.
  2. Add clean potatoes to the slow cooker. Then add the garlic, the remaining garlic powder, onion powder, salt & pepper.
  3. Cut 2 tbsp of butter into cubes or slices. Place in different areas over the potatoes. That way all the potatoes will be buttered when it melts.
  4. Add the seared chicken thighs on top of potatoes.
  5. Pour the bottle of Italian dressing over the chicken. Salt and pepper the chicken again if desired. Add 2 tablespoons of grated parmesan cheese over the chicken.
  6. Cover and cook on high for 4 hours. Sprinkle with the remaining parmesan before serving. Serve and enjoy!

Notes

You can leave out the garlic clove and additional seasonings if you want. The Italian Dressing has plenty of flavor. I like everything with a lot of seasoning.Â
