- In a skillet over medium heat, sear the chicken thighs in 1 tbsp of the olive oil. Cook about 3 minutes per side. Make sure the skillet it hot before adding chicken skin-side down. Season each side with 1/2 of the salt, pepper, and garlic powder.
- Add clean potatoes to the slow cooker. Then add the garlic, the remaining garlic powder, onion powder, salt & pepper.
- Cut 2 tbsp of butter into cubes or slices. Place in different areas over the potatoes. That way all the potatoes will be buttered when it melts.
- Add the seared chicken thighs on top of potatoes.
- Pour the bottle of Italian dressing over the chicken. Salt and pepper the chicken again if desired. Add 2 tablespoons of grated parmesan cheese over the chicken.
- Cover and cook on high for 4 hours. Sprinkle with the remaining parmesan before serving. Serve and enjoy!
Notes
You can leave out the garlic clove and additional seasonings if you want. The Italian Dressing has plenty of flavor. I like everything with a lot of seasoning.
