The Ultimate Low-Carb Treat: Baked Keto Blueberry Donuts with Lemon Glaze

There is nothing quite like the combination of sweet, bursting blueberries and a tart, zesty lemon glaze. If you are missing your favorite bakery trips on a low-carb diet, these Baked Keto Blueberry Donuts are about to become your new morning staple.

They are incredibly soft, completely sugar-free, and take less than 30 minutes to make. By using a blend of almond and coconut flours, we achieve that perfect bakery-style crumb while keeping the net carbs incredibly low—just 4.3 grams per donut!

Ingredients

For the Donuts:

  • 1 cup blanched almond flour
  • 2 tbsp coconut flour
  • ⅓ cup granular erythritol or monk fruit sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • ¼ cup unsweetened almond milk
  • 2 tbsp butter, melted
  • 1 tsp vanilla extract
  • ½ cup fresh blueberries

For the Lemon Glaze:

  • ¼ cup powdered erythritol or powdered monk fruit
  • 1 to 2 tbsp fresh lemon juice
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C) and thoroughly grease a 6-cavity donut pan with cooking spray or butter.
  2. Whisk the Dry: In a large bowl, whisk together the almond flour, coconut flour, granulated sweetener, baking powder, and salt.
  3. Mix the Wet: In a separate bowl, beat the eggs, almond milk, melted butter, and vanilla extract until smooth.
  4. Combine: Pour the wet ingredients into the dry ingredients and stir gently until a thick batter forms. Carefully fold in the fresh blueberries so they don’t burst.
  5. The Piping Bag Trick: To fill your pan cleanly without a piping bag, spoon the batter into a gallon-sized Ziploc bag. Press the air out, seal it, and snip a half-inch hole in one of the bottom corners. Pipe the batter evenly into the 6 donut cavities.
  6. Bake and Cool: Bake for 18 to 20 minutes until the edges are golden brown and the tops spring back when lightly touched. Let them cool completely in the pan before removing them.
  7. Glaze: Whisk the powdered sweetener and lemon juice together until smooth. Dip the tops of the completely cooled donuts into the glaze and let them set on a wire rack.
