While Bobbi Jo always loves keeping me company in the kitchen on baking days, this particular recipe is strictly for the two-legged family members. After whipping up batches of snacks for the pups, it’s time to reward ourselves with a true classic. Today, we are making the ultimate Chewy Chocolate Chip Cookies! I’m making these for my mother-in-law because these are her favorite.
These cookies are incredibly soft, packed with chocolate, and easy to throw together.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 1 tablespoon vanilla extract
- 1 egg
- 2 cups semisweet chocolate chips

Instructions
- Prep the pans: Preheat your oven to 325°F (165°C). Grease your cookie sheets or line them with parchment paper to prevent sticking.
- Cream the wet ingredients: In a medium bowl, cream together the melted butter, brown sugar, white sugar, and salt until they are well blended. Beat in the vanilla and the egg until the mixture is light and creamy.
- Combine the dry ingredients: Sift in the flour and baking powder. Crucial tip: Mix just until everything is blended together, and do not over-mix! If you over-mix the dough, it will make the cookies cakey instead of chewy.
- Add the chocolate: Gently stir in the semisweet chocolate chips.
- Scoop the dough: Mom just takes an ice cream scoop and scoops the dough directly onto the cookie sheet. You can use a spoon or whatever you prefer! How much cookie dough you drop at a time depends on how big you want the cookies to be. Make sure to space them a couple of inches apart to give them plenty of room to spread out while baking.
- Bake: Bake for 15 to 17 minutes, or until the edges are lightly toasted and golden.
- Cool and serve: Wait for the cookies to cool for a few minutes on the pan so they can set, then remove them from the cookie sheet.
