Cheesy Chicken Taquitos

Slow Cooker Cheesy chicken taquitos are a crowd-pleasing favorite that combines the comforting flavors of chicken and cheese, making them a perfect choice for any gathering or simply a quick and tasty meal. They are simple to make in your slow cooker.

Ingredients
  

  • 3 chicken breasts
  • 6 oz cream cheese
  • 1/4 cup water
  • 1 packet taco seasoning
  • 1 cup cheddar cheese
  • 1 cup Salsa for topping
  • 12 6 in flour tortillas
  • 1 tbsp butter melted for tortillas if baking in oven

Equipment

  • 1 Slow Cooker

Method
 

  1. Place the chicken in the bottom of the slow cooker.
  2. In a mixing bowl, mix together cream cheese, water, and taco seasoning mix.
  3. Pour on top of chicken. Cover. Cook 6 hours on low.
  4. After 6 hours, shred chicken with 2 forks. Add cheddar cheese.
  5. One the cheddar cheese is melted. Place chicken in flour tortilla. Wrap tightly. Place seam side down on a baking sheet.
  6. Place the tortillas in a 425 degree oven for 6-8 minutes until the edges are golden brown. Remove and Enjoy!

Notes

This can be a low carb/keto meal if you use low carb wraps. The chicken mixture is low carb.
If you don't want to put the tortillas in the oven. You can always warm your tortilla on a skillet on the stovetop instead. Then fill the tortilla and roll tightly. 
Add salsa for added flavor. 
These can also be frozen for another time.
