Burger Press
Next up is forming those patties. We’re using the Weston Burger Express, which makes 4 ½ inch patties. It also lets you adjust the thickness, from as thin as ¼ pound to as thick as ¾ pound. We prefer ours on the thinner side, so we set the press to ¼ pound.
For the perfect patties, crack 2 eggs into the ground beef. If you are creating a larger batch of meat you may need to add more. The eggs help the patties hold together better when cooking. Season the beef to your taste— we used a salt substitute and pepper, but feel free to add any spices or herbs you like.

Before pressing the patties, place a piece of Weston Hamburger Patty Paper in the press, or cut down some parchment paper to fit. This makes it easier to lift the patties out later. Then, add your seasoned ground beef to the press and use the handle to shape the patties.
Once all your patties are formed, stack them with a piece of parchment paper between each one. This prevents them from sticking together. Place them in a freezer bag and store them in the freezer until you’re ready to cook them.
