Great-Grandma Peavy’s Pecan Pie

I will post the recipe below. This recipe makes 2 pies. To convert this to a sugar-free pie, use a brown sugar substitute like Swerve or Splenda. There are many brands of brown sugar substitute these days. All the other ingredients stay the same. Some sugar substitutes are sweeter than others so you may have to experiment with what tastes best to you. I used Swerve and my parents loved the pie. They did say it was a little sweet but they just had smaller slices. The whole pie was gone quickly though.

Great-Grandma Peavy’s Pecan Pie

This is my Great-Grandma's pecan pie recipe. This recipe makes 2 pies. The only difference between regular and sugar free is the sweetener. Use brown sugar substitute for the sugar free version.

Ingredients
  

  • 1/2 cup margarine melted or butter
  • 3 tsp flour
  • 2 cups brown sugar or brown sugar substitute to make sugar free
  • 1/2 cup whole milk
  • 5 large eggs
  • 1/4 tsp white vinegar
  • 3 tsp vanilla extract
  • 2 cups pecans Original recipe calls for 1 cup but I use 2 cups
  • 2 pie crusts

Method
 

  1. Mix all ingredients together except pecans.
  2. If brown sugar is lumpy, use a fork to break the lumps up.
  3. Once smooth, fold in pecans.
  4. Pour into crust and bake for 55 – 60 minutes until set.
  5. After 20 – 30 minutes baking time, check crust. If it is golden brown place a pie shield or aluminum foil over the crust edges to prevent burning.
  6. Remove from oven when done and enjoy!

Chocolate Pecan Pie Bark

Chocolate Pecan Pie Bark

This candy is easy to make. It makes a great gift giving candy for Christmas. It only takes 15 minutes to prepare and bake. The longest amount of time is spent cooling. It tastes like pecan pralines on a graham cracker. This is sure to be a crowd pleaser.

Ingredients
  

  • 12 Sheets Graham Crackers
  • 1 cup Chocolate Chips
  • 1 cup Butter
  • 2 cups Chopped Pecans
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1 cup Brown sugar (packed)

Method
 

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with foil and spray with cooking spray.
  3. Tightly line up graham crackers on baking sheet.
  4. Over medium heat melt butter.
  5. Add in salt and brown sugar. Bring to a boil. Once boiling, stir constantly for 3 minutes.
  6. Add pecans and cook an additional 20 seconds. Remove from heat and add in vanilla extract.
  7. Pour onto graham crackers. Spread evenly across crackers. If too thick, watch my video to show how to correct that problem.
  8. Bake 10 minutes.
  9. Cool completely and then break apart. Enjoy!

Cream of Chicken & Rice

Ingredients
2 cups water
1 tablespoon butter
1 tablespoon chicken base
1 cup rice
1 can cream of chicken soup
1 can water

Directions
Heat 2 cups water, butter, and chicken base to boiling. (If you don’t have chicken base you can use 1 cup chicken broth & 1 cup water or just 2 cups water.)
Once boiling, add in rice. Give it a stir. Place lid on pot. Reduce heat to low. Simmer for 20 minutes or until water is absorbed.
In a bowl, whisk together cream of chicken soup and 1 can water.
Once rice is done, pour in cream of chicken. Mix well. Cook over low heat an additional 10 minutes, stirring occasionally.
Then pour into bowls and enjoy.
Season with salt & pepper or your favorite seasonings.

Note: If using different types of rice just follow directions on the rice package. You can also use instant rice.

Southern Style Green Beans

Ingredients
3 slices of bacon
3 cans of green beans – drained
2 medium russet potatoes chopped
1 tablespoon minced garlic
1 tsp black pepper
2 cups chicken broth

Directions
Cook bacon (I sliced each slice into thirds so I had 9 small slices of bacon)
Once done, add in green beans, potatoes, garlic, & black pepper. Mix.
Add enough chicken broth to cover the green beans.
Cover and simmer for 30 minutes or until potatoes are soft.
