Toffee Crunch Delight Cookies

Ingredients
2 cups all purpose flour
1 tablespoon cinnamon
1 teaspoon salt
1/2 teaspoon baking soda
2 sticks of butter (room temp)
1 egg
1 1/2 cups granulated sugar
1/4 dark brown sugar
1/2 cup toffee pieces
1/4 cup chocolate chips
1 cup chopped pecans


Directions
Preheat oven to 375 degrees
In a mixing bowl, whisk together flour, cinnamon, salt, & baking soda. Set aside.
In another mixing bowl, add butter. Beat until fluffy.
Add in both sugars. Beat until fluffy.
Add in egg. Beat until combined.
Slowly add in dry ingredients from other bowl.
Once mixed, add in toffee pieces, chocolate chips, and pecans.
Use hands to mix dough well.
Scoop dough onto parchment paper lined cookie sheet.
For larger cookies, use larger mounds of dough. (I made large and medium cookies. For the large cookies I scooped 1/3 cup of dough onto parchment paper. For the medium cookies I used a cookie scoop.)
Place dough in freezer for 25 minutes or until firm.
Then place in oven for 13 – 14 minutes.
Remove from oven and let cool.
Repeat until all dough is used.

Butterscotch Peanut Butter Haystacks

Ingredients
12 oz bag of butterscotch chips
1 cup peanut butter
12 oz bag of chow mein noodles

Directions
In a microwave or double boiler melt butterscotch chips. Once melted, remove from heat.
Add in peanut butter and stir until melted.
Pour into a mixing bowl.
Add in chow mein noodles.
Carefully mix until fully coated.
Using 2 spoons, drop by spoonfulls onto parchment paper.
It will take about an hour for them to fully set. You can put them in the fridge to speed up the process.

Chocolate Covered Saltine Peanut Butter Crackers

Ingredients
Saltine Crackers
Peanut Butter
Melting Chocolate ( or Chocolate Chips any flavor)


Directions
Cover a saltine cracker with peanut butter and place another saltine on top to make a peanut butter cracker sandwich.
Make as many peanut butter cracker sandwiches as you want.
Stick in freezer.
Melt chocolate (Melt as much chocolate as you need. You can always melt more if you run out).
Remove crackers from freezer.
Dip in melted chocolate. Be sure to cover all sides. Place on parchment paper and continue until all crackers are covered.
The ones dipped in white chocolate I sprinkled with red and green sugar sprinkles.
The ones dipped in milk chocolate I sprinkled with salt to get a good sweet and salty taste.
It can take an hour for the chocolate to set. You can stick in the refrigerator to speed up the process.
These are great to share at Christmas!

Coconut Macaroons

Ingredients
14 oz bag of sweetened coconut
14 oz can sweetened condensed milk
1 tsp vanilla extract
2 eggs whites (room temp)
1/4 tsp salt

Directions
Preheat oven 325 degrees.
Pour coconut in a mixing bowl.
Add in sweetened condensed milk & vanilla extract.
Mix everything together and set bowl aside.
In a separate bowl, mix together egg whites and salt.
Mix on high until soft peaks form. (Egg whites will stand up on whisk)
Gently mix egg whites into coconut mixture.
Using a tablespoon or cookie scoop, drop a scoop at a time on parchment paper lined baking sheet.
Bake for 20 – 25 minutes until coconut is lightly toasted.
Remove, let cool, and enjoy!
